We love carrots!

In addition to the health benefits of carrots, they also dazzle me. The carrots above look to be dancing under water.
Purple carrots are a garden novelty and taste great. 
Lucca is a great little helper!



I found another neat carrot combo.


We have a few more carrots in the garden. I hope they bond before I harvest.

Yay new potatoes!!! 
After fretting over the health of our first potato crop, I found about ten pounds of potatoes beneath the soil. I am so proud to harvest our own potato crop. The second planting of potatoes will be equally exciting.

I love our garden. Our second planting of green beans and potatoes are popping out of the ground.


People say that rhubarb will not grow here due to the lack of a cold winter. I will hope for the best! 
The first tomato must have grown overnight. 
Now for some flowers and critter pics. 
I think I scared this fella. 
The rescued dwarf Japanese maple continues to amaze us. I am so glad we saved this 34-year-old tree.
One of my favorite trees is our young rescue tulip poplar.

I hope y’all are as excited as I am about this year’s Grow&Swap! The date is Saturday April 14, 2012 from 9AM
until 11AM at the Beal’s Hill community garden next to the Centenary Methodist Church on the corner of Ash and College street.

How quickly the garden grows overnight.
The summer squash seedlings are thriving.
The carrot greens are a tasty treat.
The yellow and black bug seems to like the camera.
Soon the blueberries will be in our breakfast bowl.

This is our first crop of potatoes and beans. I planted the second round of potatoes and beans yesterday.
The spider is content to sit on the Yukon gold potato for a picture.

The garden will soon be level with rich soil. 
Lasagna layering in the garden is a great way to create productive vegetable growth as the compost continues to decompose.


We decide one more truck load of top soil will suffice with Jungle Growth dirt purchased at Lowes.

Hearty grows wishes to our potatoes, red cabbage, brussels sprout, red and sweet carrots, broccoli, cauliflower, collard greens, rutagaba plants, butter crunch lettuce, red and sweet onions and the asparagus bed!
Otis is a big help!

Pumpkin…aside from the sweet potato is my kind of autumn grub. Before Andy brought home two pumpkins, I never thought about making a pumpkin pie from scratch.
So, I grabbed my cookbook. The Joy of Cooking, duh! I wish the photo below was a scratch and sniff!
Please do not judge by the looks alone. After baking the pumpkin for about eight hours with a great deal of ingredients in the pumpkin itself, it was time to call in the blender.
Turns out one pumpkin equals five pies!
