We love carrots!

In addition to the health benefits of carrots, they also dazzle me. The carrots above look to be dancing under water.

 

 

 

Purple carrots are a garden novelty and taste great.

 

Lucca is a great little helper!

 

 

 

 

 

 

I found another neat carrot combo.

 

 

 

We have a few more carrots in the garden. I hope they bond before I harvest.

Sweet Potato Wealth   6 comments


In the spring I had two large sweet potatoes left over from a friends garden that never found their way into some delicious meal. The potatoes made slips so I mounded up some dirt and planted them.

I decided this morning to see what action was going on beneath the soil. I laughed in delight when I unearthed my very first sweet potato!

 

 

I gathered around eight pounds of lovely sweet tasties. I added a little more soil and gave the plants some water.

 

 

I am may just bake a sweet potato pie today!

Our garden is hard at work!

 

  The summer medley of squash is bursting with blossoms. In a week or less we will be dining on grilled squash!

 

 

The cucumbers are making tiny cukes. 

 

  The grasshopper is one of my many little garden friends.

 

 

  The beans taste better than they look!

Mulberry Banana Pie   2 comments


Fresh, frozen, blended and now in a pie. I stir a couple of recipes around in my head. The result is a mulberry and banana pie.

 

The mulberries are plentiful even after all the critters have had their breakfast.  I enjoy food play in desserts most of all.

 

 

 

Thus a banana and mulberry pie idea takes fruition.

 

 

We have a winner!

 

 

 

Take about four cups of mulberries with a cup of water and let simmer with two or three semi-ripened bananas until tender. Add the juice of one lemon with a bit of the zest. Sugar to taste. I used 1/8 cup sugar. Add in either corn or potato starch to blended mix for thickening agent. After the pie filling and crust have cooled, add the filling to top of crust and let chill for at least three hours before serving.

 

The pie is delicious. Tastes similar to cooked blackberries.

Giving Tree: The Red Mulberry   10 comments


Mother Nature provides. 

 

The red mulberry tree in our yard is laden with fruit.

  The grass offers a cushion for the fruit upon descent. I carefully manuever around the yard to gather breakfast.

 

 

 

The mulberry tree is one of the top seven most-important plants for numerous birds species. I have witnessed birds fall out of the tree. The squirrels and rabbits enjoy the sweet fruit as well.

 

 

 

 

A cup of mulberries has only 60 calories. They are rich in antioxidants, fiber, vitamins K and C, potassium, riboflavin, iron, magnesium, and potassium.
