Mulberry Banana Pie   2 comments


Fresh, frozen, blended and now in a pie. I stir a couple of recipes around in my head. The result is a mulberry and banana pie.

 

The mulberries are plentiful even after all the critters have had their breakfast.  I enjoy food play in desserts most of all.

 

 

 

Thus a banana and mulberry pie idea takes fruition.

 

 

We have a winner!

 

 

 

Take about four cups of mulberries with a cup of water and let simmer with two or three semi-ripened bananas until tender. Add the juice of one lemon with a bit of the zest. Sugar to taste. I used 1/8 cup sugar. Add in either corn or potato starch to blended mix for thickening agent. After the pie filling and crust have cooled, add the filling to top of crust and let chill for at least three hours before serving.

 

The pie is delicious. Tastes similar to cooked blackberries.

  1. Did you bake the pie? Or did the pie crust cool from pre-baking the crust? (I have a bunch of mulberries just waiting for this!!!!)

    • Oh sorry not to include that information. I let both the pie crust and cooked mulberries and banana mixture cool before spooning the filling into the crust. I let chill about three hours before serving. Thank you for checking out my blog. Take care, Anna
